I made these tonight - Hold on to your cheese filled hat - if you like Cheez-Its - These knock them out of the water! Salty, Cheesy, Mouth-watering buttery - goodness. Drooling yet? Times like these I wish Smell-o-vision had been invented. Because the aroma in my house is making it VERY hard for me not to eat the THREE batches I made. (the recipe below is only for one batch).

INGREDIENTS
1½ cups (6 oz) grated extra-sharp Cheddar cheese
4 tablespoons (1/2 stick) unsalted butter, softened and cut into pieces
¾ cup flour, plus more for dusting
½ teaspoon salt
½ teaspoon Smoked Paprika
1 tablespoon milk

DIRECTIONS
  1. Preheat oven to 350˚.
  2. Put everything except the milk in a food processor. Pulse the processor, 5 seconds at a time, for about 5 or 6 times, until the dough is in coarse crumbs.
  3. Add the milk and process until the dough gathers together in a ball.
  4. Roll the dough out on a floured board with a rolling pin that has been floured until it is about 1/8 inch thick.
  5. Cut the dough into 1-inch squares with a sharp knife or pizza cutter. You can put a bit of flour on the blade of the knife to keep it from sticking. Use a toothpick or skewer to poke a hole in the center of each cracker.
  6. Place the crackers at least ¼ inch apart on parchment paper on a baking sheet.
  7. Bake for 12 – 15 minutes until the edges are just starting to brown.
  8. Put the baking sheet on a rack and let the crackers cool completely.
  9. Eat! Or store in a covered container or ziploc to eat within a few days.

NOTES
Substitute other cheeses for the cheddar for a different snack every time!

Just made these...I must not have rolled them out thin enough because mine are pretty thick now.... But they are super yummy! Next time I will roll them thinner!

They are so addicting! Glad you like them :) yes, I had to make sure mine were rolled pretty thin - but my thicker ones still tasted good, just not as "crunchy"

I just made them. Very good! I needed to roll them our thinner and salt the tops a bit. My daughter and I had fun doing this together. Now the challenge is to same some for my husband and boys!

Can we use regular peprika instead of smoked?

You can use either. I used smoked because that is what I have on hand. You can also use cayenne or any other flavor that is tantalizing to your taste buds :)

SO good!!!! Though, my kitchen is rather eccentric (don't be fooled, i like to pretend I'm from other countries through my cooking but I'm super white and boring) so I had to make some adjustments. I used wasabi Gouda cheese and since I didn't have paprika I used Greek seasoning with chili powder. So good, though next time I would like to try the real recipe because cheeze-its are simply scrumptious!

My FIL just came to live with us and he loves cheese crackers, but the ones in the store are so full of sodium and other junk that I won't buy them for him. I'm glad you posted this. I know that chees is still high in sodium, but at least I know what's in them and I'm sure they're healthier than store bought. Thank you so much for sharing.

Debbie, that is so awesome! That was one of the reasons I just made them today was to send to my FIL. He had just sent us a Trader Joe Care Package so I thought it would be fun to send him his favorite crackers as a Thank you gift. Great minds think alike! I hope your FIL likes them!
