Protein Granola Bars

INGREDIENTS
3 cups oats
2 cups rice krispies
3 tbsp chia seeds
1/3 cup honey
1 cup chunky peanut butter
1/2 cup olive oil
2 eggs beaten
1/3 cup protein powder
1/3 cup chocolate chips
1/3 cup chopped walnuts
2 tsp vanilla

DIRECTIONS
Preheat oven to 350*. Mix all honey, olive oil, eggs, peanut butter, vanilla, protein powder, and chia seeds.

In a separate bowl, mix oats, rice krispies, walnuts, and chocolate chips.

Pour peanut butter mixture into cereal mixture, combine until everything is coated. May have to get your hands in there - it mixes a lot better that way.

Line jellyroll pan with parchment paper. Press mixture evenly into pan. Place in oven and bake for 20 mins and edges are golden.

Let cool for about 10 mins. then cut while still in the pan. This will help them cool "set up" faster.
