Strawberry Sandies

It has been so cold and windy lately, that I am hoping we get some sunshine soon! So, to encourage good weather, I am making Strawberry Sandies. My house smells so strawberry good right now that it is hard not to gobble up all of the cookies before I get to share them with my hubby and friends. Here is the recipe:

Makes about 2 dozen cookies
Prep: 15 minutes, Bake: 12-14 minutes
Cool: 17 minutes

Ingredients
1/2 cup sugar
1 (18.25-ounce) box of Strawberry cake mix
1/2 cup all-purpose flour
1/3 cup water
1/4 cut butter, softened
1 large egg

Instructions
Preheat oven to 350 degrees. Lightly spray baking sheets with nonstick cooking spray (or use parchment paper). In a shallow bowl, place sugar.

In large bowl, combine cake mix, flour, water, butter, and egg; beat at low speed with an electric mixer until well blended. Using hands, shape heaping tablespoonfuls of dough into balls; roll in sugar to coat. Place 2 inches apart on prepared baking sheets, and pat gently to flatten.

Bake for 12 to 14 minutes, or until set. Cool on pans for 2 minutes; remove to wire racks to cool completely (about 15 minutes).
