Chopped Salad

I start with the following veggies*

1 of each - Yellow, Orange, and Red Bell Peppers
1 Yellow Onion medium size
5 Carrots
1 medium Red Cabbage
1 Bag of Cauliflower & Brocolli (you can buy a head of each, but this was the amount we wanted)

After washing your veggies, carefully pull off the first layers of the red cabbage for use as salad bowls. Set aside.

Chop all veggies in big or small pieces, I cut ours into small (about a 1/4" roughly) pieces. This will yield a lot of chopped salad! We usually chop everything at once time and eat them throughout the week.

*The Great thing about this chopped salad is that you can totally customize it to your tastes! If you don't like Bell Peppers you can can use another of your favorite veggies! Also you will notice that I don't use any lettuce - since most Iceberg Lettuce has no nutritional value I leave it out - plus it's fresh factor doesn't last as long as the other veggies, it tends to get slimy faster.

Combine all veggies in a large bowl. Fill each cabbage cup with the chopped mixture. Top with salad dressing and serve.
