Ingredients: 1-1/2 cups vegetable broth 1 tsp. dried oregano leaves 1 tsp. dried thyme leaves 3 Tbsp. tomato paste 1 tsp. ground cumin 1 Tbsp. chili powder 1/8 tsp. cayenne pepper salt and black pepper to taste 1 onion, chopped 4 cloves garlic, minced 2 (4 oz.) cans chopped green chilies, undrained 3 (15 oz.) cans black beans, rinsed and drained 2 (14 oz.) cans diced tomatoes, undrained 2 red bell peppers, chopped 1/4 cup chopped fresh cilantro 1-1/2 cups shredded Cheddar cheese (optional) Preparation: Combine all ingredients except cilantro and cheese in 3-4 quart slow cooker. Cover and cook on low for 8 hours. Stir in cilantro just before serving. Optional: Top with cheese
