2-1/4 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon salt 1/2 cup (1 stick) butter, softened 1/2 cup Crisco vegetable shortening 3/4 cup granulated sugar 3/4 cup packed light brown sugar 1 teaspoon vanilla extract 2 eggs 2 cups (12-ounce bag) Semi-Sweet Chocolate Chips 1/2 cup toffee bits DIRECTIONS Heat oven to 375°F. Stir together flour, baking soda and salt. Beat butter, vegetable shortening, granulated sugar, brown sugar and vanilla in large bowl with mixer until creamy. Add eggs; beat well. Gradually add flour mixture, beating well. Stir in chocolate chips and toffee bits.. Drop by rounded tablespoons onto ungreased cookie sheet - or use a large cookie scoop. Bake 12 to 14 minutes or until lightly browned. Cool slightly; remove from cookie sheet to wire rack. Cool completely. About 5 dozen cookies. It has been so cold and windy lately, that I am hoping we get some sunshine soon! So, to encourage good weather, I am making Strawberry Sandies. My house smells so strawberry good right now that it is hard not to gobble up all of the cookies before I get to share them with my hubby and friends. Here is the recipe: Makes about 2 dozen cookies Prep: 15 minutes, Bake: 12-14 minutes Cool: 17 minutes Ingredients 1/2 cup sugar 1 (18.25-ounce) box of Strawberry cake mix 1/2 cup all-purpose flour 1/3 cup water 1/4 cut butter, softened 1 large egg Instructions Preheat oven to 350 degrees. Lightly spray baking sheets with nonstick cooking spray (or use parchment paper). In a shallow bowl, place sugar. In large bowl, combine cake mix, flour, water, butter, and egg; beat at low speed with an electric mixer until well blended. Using hands, shape heaping tablespoonfuls of dough into balls; roll in sugar to coat. Place 2 inches apart on prepared baking sheets, and pat gently to flatten. Bake for 12 to 14 minutes, or until set. Cool on pans for 2 minutes; remove to wire racks to cool completely (about 15 minutes). |
